Nicaraguan pipian summer squash (white cushaw)
Before the introduction of Italian style zucchini into Central American cuisine this was(and still is) the go to variety. Pick it young and you have a beautiful white zucchini style squash. If it gets too large, there’s no loss because it grows into amazing and tasty winter pumpkin that can be roasted and eaten or used for pie. This is a white skinned cushaw or Japanese pie pumpkin.
